Thanks! There is no specific recipe that I use, but it’s basically Cacio e Pepe with pan fried mushrooms and a bit of shallot (no other veg).
I used to live off of Spanish tortilla when I was a student. All you need is potato, egg, onion, salt and pepper, and a bit of cooking oil for your pan. You can also add other ingredients like muahrooms, tomatoes, sausage, or bacon when you have it.

Close! The chocolate swirls are chocolate cake batter piped onto the baking paper and briefly baked so they hold their shape, then I poured on the vanilla batter and finished baking as instructed.
