I just realized that even though i can’t be vegan chef until they find a new dinner cook (again) i could probably get a head start thinking of menus I’d want to do. Or learning how to actually do that in a way that makes sense and like learn about ordering and logistics related to planning those menus. I have been intending to just kinda do what the chef wants me to do and wing it until I have a solid repertoire of things i wanna make, but, I could still try to plan ahead
BUT that feels like homework I’m not paid for, even though it directly benefits me and my development as a chef…
so wait I can make a cream alternative out of like, lentils, coconut oil, sugar and corn starch??? Oh wait sunflower lecithin probably necessary as an emulsifier?
